/My daughter pleads with me not to cook Brussel sprouts. She says it smells like the whole world is flatulating simultaneously. In our kitchen.
While I totes hear that, they're just too good. First of all, I adore anything mini, so these minuscule cabbages are so cute! This recipe calls for them to be shaved, which many supermarkets carry today in bags. This is such a delicious, healthy, simple JESScipe.
JESScipe- Brussel Sprouts

- 4 Tbsp Olive Oil
- 4 Minced garlic cloves
- 2 Tbsp white wine
- 2 lbs shaved brussel sprouts

I heat up my large wok with 4 Tbsp of lemon flavored olive oil. I love ๐in everything , but regular olive oil is just fine. Or use another favorite, like avocado oil. Using half olive and half toasted sesame oil would work well too. Sesame oil is strong so don't use the full amount's worth. I don't recommend coconut oil here. Too conflicting.
Heat up the oil and add 4 minced garlic cloves. The garlic will cook fast, when it starts to brown, deglaze the pan with two tbsp white wine and stir well. The wine will evaporate shortly, but when it's half gone, dump in the shaved Brussel sprouts. Stir to coat , adding more oil as needed.
Cover the pot for several minutes to sweat the sprouts. It's a sauna basically, so they'll wilt and start to cook down. Stir often, adding wine as needed to maintain a moist environment. Ew.
When the sprouts have softened significantly, remove the cover. Season with kosher salt and fresh ground pepper to taste. I'd use a half tsp salt and a quarter tsp pepper. Use cautiously, you can always add but you can't remove.
Slice a ๐in half width wise and squeeze on top, mix well. This can be a side or the base of something to put on top of it, say sliced grilled chicken or a piece of fish. I use this as a carb free base with the bolognese sauce or meat balls. I don't want to miss out on the meat, but I'd prefer to not make it a pasta party (sup, Dr. Atkins). I actually love red meat for its iron content (I'm anemic). I don't eat it much, but when I do it's often paired with this. Enjoy! And have a bottle of Tums nearby.
